Seventh Day Adventist Vegan Recipe

Hello to all who have been involved in the vegetarian cooking classes and all who are interested in healthy eating! Now that summer has really arrived, I thought you might enjoy this recipe for Garden Fresh Italian Style Pasta. It's so very healthy, especially if you use whole-wheat pasta. My favorite is Bionaturae fusilli because it is organic and so well made that you won't feel you are sacrificing any flavor or texture.

Make you own salad dressing. Simply combine:
1/2cup olive oil, 2-4 tablespoons of lemon juice, 2 cloves of garlic, 2 teaspoon of basil, 1 teaspoon of thyme, and a pinch of cayenne pepper if you want to add a little sparkle of warm to it.

Follow directions for cooking the pasta. Drain pasta, add 1/2-1 cup of raw broccoli florets, cauliflower florets, diced bell pepper (a little of the red, orange, yellow and/or green to get the full rainbow of colors), slice mushrooms, and 1/4 cup chopped parsley, small zucchini thinly sliced or diced, thinly sliced red onion to taste, tomato wedges, and black olives if you desire.

Combine and refridgerate for several hours or longer to allow the flavors to meld together.
